Ingredients


  • 3″ piece of fresh ginger
  • 1-1/2lbs boneless chicken breasts-cut into 11/2″ cubes
  • 2Tbs. canola oil
  • 1 large onion thinly sliced
  • 2 garlic cloves -minced
  • 1/4c soy sauce
  • 2Tbs. white vinegar
  • 2Tbs. sugar
  • 1/2c scallions-sliced

Procedure


  1. Peel ginger and cut into 1/8″-thick matchsticks to measure 1/2 cup.
  2. Soak in cold water 10 mins.
  3. Drain heat oil in a skillet over high heat, brown in 2 batches,6-8 mins.
  4. Set aside.
  5. In the same skillet over medium heat, cook ginger, onion and garlic, stirring until browned,8-10 mins.
  6. Add soy sauce, white vinegar and sugar, cook over high heat until thick,3-4 mins.
  7. Add chicken, stir to warm.
  8. Remove from heat.
